WHere is a simplified version of a cocktail from a new cocktail list. This is a batch prepared mix that is loaded full of flavours of the festive period, which makes it excellent for your celebration. Any leftover syrup for breakfast cocktails, puddings, or to mix more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Drink (makes 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

For the Citrus Syrup: Combine all the items inside a pan, bring to a gentle boil, mixing to dissolve. Next, turn off the burner and leave to cool down entirely. Pour to a clean bottle, seal and refrigerate it chilled, where it will keep for about one month.

To make Premix: Mix all the liquid ingredients into one big jug, allow it to infuse for an hour, then strain preferably using cheesecloth, to ensure it's perfectly clear.

When ready to serve: Measure 85ml of the batch mix into a stirring glass filled with ice, and agitate lightly for about 60 seconds to chill. Filter to a frosted cocktail glass or equivalent, garnish with some cranberries adding the final touch by giving it a brief mist with the mandarin essence above the glass.
